quick adzuki bean soup
- 4 cups good water
- 1 can of eden organic adzuki beans (or your own fresh cooked beans)
- 2 cups butternut squash (cut, peeled, and cubed)
- 2 stalks celery, chopped
- 1/2 medium onion, chopped
- 1 package organic frozen (or fresh cut) corn
- 1/4 cup tamari or Bragg Liquid Aminos
- 2 tbsp. scallions, chopped

add water, squash cubes, celery, onion, beans, and corn to nice size soup pot and bring to a boil on high
heat... turn heat down to medium-low, cover, and simmer for 15-20 minutes... add tamari or Braggs and scallions,
stir, and let sit for 5-10 minutes... add some spelt or brown tice noodles and voila! this is one of our favorite soup recipes, which we have frequently with organic squash that is grown right down the road
soba noodles with celery, scallions, and shitake mushrooms
cook soba, rinse and drain... brush a skillet with sesame oil (2-3 tsp.) and heat... add shitake and celery... place soba on top
of the vegetables and cover... reduce flame to low and simmer until the celery is about half cooked... add scallions and tamari
and saute for another 3-5 minutes... serve hot - garnish with toasted nori strips or roasted sesame seeds, or eat as is...
