organic cornbread


p i c t u r e d : local grown organic butternut squash, home grown salad, organic brown rice, kidney beans, cabbage, and cornbread

an extremely easy to make, and highly versatile food for any time of the day or night is organic cornbread... and our favorite recipe for it hails from eden foods:
  • 1 1/2 cups organic yellow cornmeal
  • 1 1/4 cups organic unbleached white flour
  • 2 teaspoons non-aluminum baking powder
  • 1 teaspoon sea salt
  • 1 1/2 cups Edensoy Original, EdenBlend or Edensoy Unsweetened
  • 1 tbsp. organic apple cider vinegar
  • 1/2 cup organic maple syrup
  • 1/4 cup organic olive, soybean, or safflower oil
preheat oven to 350° - oil an 8" x 8" square or 8" round cake pan - in a medium bowl, combine cornmeal, flour, baking powder, and sea salt - in a separate bowl, combine Edensoy, cider vinegar, maple syrup and oil - stir into flour mixture until completely blended - pour into cake pan and bake for about 35 to 40 minutes - enjoy!
