vegan potato salad
- boil 5 pounds of organic red potatoes......... remove peels and cube
- chop fine: 3 large stalks organic celery
- grate: 2 medium organic carrots
- thin sliver of organic red onion chopped very fine or 2 scallions chopped
- 3/4 cup vegan mayo / organic Veganaise
- 3 Tbs organic stone-ground mustard
- sea salt + black pepper to taste

mix it all together in a big bowl and chill for a while... enjoy with sliced garden-fresh tomatoes, lettuce, cukes, etc.. - awesome summery meal great as a side-dish or by itself
pasta toss
- 1 1/2 cups warm water
- 2 organic boullion cubes
- 2 tbsp. arrowroot
- 2 tbsp. vegan margarine or olive oil
- 2 medium carrots (chopped into matchsticks)
- 1 medium red pepper (cut into thins strips)
- 1 large onion (chopped)
- 1 cup mushrooms
- basil
- 1 small head broccoli (steamed)
- 1 lb. fusilli / rotini / or shell pasta

mix water, boullion, and arrowroot... in skillet heat oil, add onion, then carrots, and other ingredients - saute until
tender... add arrowroot mix, stirring constantly... pour over cooked pasta and toss... best when eaten cool...
