vegan potato salad / pasta toss



vegan potato salad
  • boil 5 pounds of organic red potatoes......... remove peels and cube
  • chop fine: 3 large stalks organic celery
  • grate: 2 medium organic carrots
  • thin sliver of organic red onion chopped very fine or 2 scallions chopped
  • 3/4 cup vegan mayo / organic Veganaise
  • 3 Tbs organic stone-ground mustard
  • sea salt + black pepper to taste
mix it all together in a big bowl and chill for a while... enjoy with sliced garden-fresh tomatoes, lettuce, cukes, etc.. - awesome summery meal great as a side-dish or by itself


pasta toss
  • 1 1/2 cups warm water
  • 2 organic boullion cubes
  • 2 tbsp. arrowroot
  • 2 tbsp. vegan margarine or olive oil
  • 2 medium carrots (chopped into matchsticks)
  • 1 medium red pepper (cut into thins strips)
  • 1 large onion (chopped)
  • 1 cup mushrooms
  • basil
  • 1 small head broccoli (steamed)
  • 1 lb. fusilli / rotini / or shell pasta
mix water, boullion, and arrowroot... in skillet heat oil, add onion, then carrots, and other ingredients - saute until tender... add arrowroot mix, stirring constantly... pour over cooked pasta and toss... best when eaten cool...
