this makes a soft, mildy sweet, slightly cakey loaf - fresh ground flour is always best if possible - i actually grind pearl barley and rolled oats in a coffee grinder when i make it, so whatever you have on hand will work! this recipe makes a pretty large batch, as it was originally made to be shared with a bunch of monks, so just cut it in half if you don't need this much
THE RECIPE:
ideally, all ingredients should be organic for maximum health benefits...
4 cups unbleached white flour
2 cups whole wheat flour
2 cups pastry flour
2 cups oat flour
2 cups barley flour
1 1/2 tbsp. sea salt
5 cups water
3/4 cup starter
mix all flours well, add water and starter, roughly combine all ingredients, cover, and let sit for an hour... turn onto a floured board or counter and knead well for 10 minutes, return to pot or bowl, cover again and let stand for 4 hours... remove from pot to floured board / counter, separate into 6 pieces, knead each to form an even round loaf... let raise in baskets, bowls, or simply on the counter top provided it is well floured, cover with a clean cloth and let stand 3 to 4 hours... preheat oven to 500, place loaves on baking stone, or place baking pans directly into oven and bake for 25 minutes (longer if you like a dark crust)... makes 6 loaves... cool, share, enjoy
