home made vegan mayonnaise



sourdough bread is a main food around here, and our favorite way have it is with a little home made vegan mayonnaise and a combination of few things like sea salt, dulse flakes, gomasio, shiso leaf powder, nutritional yeast flakes, cayenne pepper - and a giant pile of fresh home grown sprouts and greens - sometimes with a little tofu or beans, prepared or plain... its very simple, light, quick, and energizing, and can be eaten anytime... the basis of this recipe comes from eden foods, but has been adapted to our tastes - please experiment to find your own preferences
  • 1/2 cup eden rice and soy milk or another thick plain soymilk
  • 1 cup organic oil (olive, safflower, sunflower, etc. or a combination of your favorite flavors)
  • 1/2 tsp. sea salt
  • 1/8 tsp. black pepper
  • 1/2 tsp. organic apple cider vinegar
  • 1/2 tsp. organic mustard

  • add milk to blender and start at medium speed - begin slowly drizzling a thin stream of oil into milk - continue until it thickens and all is added - once thick, pour contents into a bowl and add other ingredients, using a whisk to mix it well - store in a re-used glass jar and keep refrigerated - after trying so many vegan mayos over the years, we found this is lightyears beyond any pre-made type - it takes a little more time than just opening a jar off the shelf, but its extremely worth it!
