the peaches
5 cups peaches, peeled and sliced (approximately 7 large peaches - organic and / or local is always best!)
3 Tbsp arrowroot powder
1 Tbsp lemon juice
1/4 - 1/2 cups maple syrup or other mild organic sweetener depending on the peaches
mix all ingredients and set aside while making the crust
double crust
1 1/4 cup organic unbleached white flour
1 1/4 cup organic pastry flour
1/2 tsp sea salt
2/3 cup organic oil (we like olive)
1/3 cup cool water
mix flours and salt, mix oil and water then add to the flour mixture... with fork stir together until it is just mixed... divide into 2 portions - roll out between 2 sheets of waxed paper (go over the counter top with a wet sponge will help keep it from slipping) - remove top sheet and lay into pie plate... pour in peach filling and top with crust... trim edges, seal and flute... cut vents in to to let out the steam...
bake at 400° for 10 minutes, then reduce to 375° for approximately 50 minutes - until peaches bubble through the vents (put a tray underneath on the rack below to catch any juice that bubbles over)...
cool completely - its at its very best chilled!!
