carrot cake / ginger cookies



two all-time favorite sweet Eden recipes

carrot cake
  • 1 cup organic whole wheat pastry flour
  • 1 cup organic unbleached white flour
  • 1/4 teaspoon sea salt
  • 2 teaspoons non-aluminum baking powder
  • 1/2 cup organic seedless raisins
  • 2 cups grated carrots
  • 1/4 cup organic olive oil
  • 1/2 cup pure maple syrup
  • 1 teaspoon cinnamon
  • 1/4 cup organic soymilk
  • 1/2 cup water
  • 1 Tbsp. organic apple cider vinegar
pre-heat oven to 375°... mix flours, salt, baking powder, raisins, carrots and cinnamon together in a bowl... in another bowl, combine the oil, maple syrup, soymilk, water and vinegar and mix well... pour wet ingredients into dry ingredients and stir until the batter is smooth... lightly oil and flour an 8x8 cake pan... pour batter into pan and bake for 25 to 30 minutes... cool completely before eating... very simple and easy to make - add some chopped walnuts if you are so inclined


ginger cookies
  • 1/2 cup organic eden oil (we usually use a blend)
  • 2/3 cup eden organic barleymalt syrup
  • 1/3 cup pure maple syrup
  • 1/4 cup hot water
  • 3 cups organic unbleached white flour, sifted
  • 1 1/2 teaspoons baking soda
  • 1/3 teaspoon eden sea salt
  • 1 1/2 tablespoons ground ginger
  • 1 tablespoon ground cinnamon
preheat oven to 325°... combine oil, barley malt, maple syrup and hot water... in a separate bowl, combine flour, baking soda, ginger, cinnamon and salt... mix dry and wet ingredients together... roll out thin between wax paper or the countertop if you know what you're doing, and cut with your favorite cookie cutter... if you have been especially good to the Ginger deva it may have bestowed the blessing of funky cookie-cutters such as these - to make ginger Ganesh, Anubis, Butterfly, Heart, Moon, and Star Cookies... bake for 10 minutes until the bottom of the cookies are slightly brown + enjoy sharing them
