vegan chocolate chip cookies



  • 1/2 cup vegan margarine
  • 3/4 cup maple syrup
  • 1/4 cup egg replacer OR 2 Tbsp. raw organic almond butter
  • 1/4 cup plain or vanilla soymilk
  • 1 tsp. vanilla extract
  • 1 tsp. non-aluminum baking powder
  • 2 1/4 cup organic unbleached white flour
  • 1/2 bag organic vegan chocolate chips
  • 1/2 cup chopped pecans
Pre-heat oven to 350°. Cream margarine, maple syrup, and vanilla extract til pretty smooth, then add the egg replacer (Ener-G works great) or almond butter and soymilk and blend some more... Mix baking powder and flour well, then add gradually to the creamed mixture - keep mixing til its a smooth white batter - almost whipped... Add vegan chocolate chips (sunspire are good!) and chopped pecans - mix til evenly distributed... Spoon onto cookie trays (a heaping tablespoon of batter per cookie is cool)... Bake for 15-20 minutes or until they are golden brown like in the picture above - cooked all the way, but still moist and chewy... these are highly concentrated so ENJOY IN MODERATION for maximum effect! :)

If you are feeling particularly stoked and want to celebrate with the sugar fairies, or are just plain jonesin for some chocolate, this is a highly effective, not too extreme solution... As long as you don't really over-do it, and delight in (and give thanks to JAH for) the chocolate buzz, its one very serious pure treat... Excellent to eat while watching strongbad emails... This combo is very highly recommended... Few things contribute to overall well-being like regular (and plentiful) doses of levity, with a modest amount of naturally tasty treat-morsels...
