3.5 texture started really improving at this point - the flour to water ratio is about 12 cups of flour to 5 cups of water, including the flour used in kneading... you really do get a feel for when the dough is just right, so that it will produce a nice round loaf that isn't too dry... still using bowls for raising at this point



3.6 these first white flour loaves disappeared in the first 2 days after baking they were so good, and 'the brown bread' is just as tasty
