heat oil in large iron skillet, saute onion... add cut plum tomatoes with a small amount of the juice... add beans, cumin and cayenne... when it beings to bubble, cover and let simmer for 20 minutes... season with braggs liquid aminos to taste... serve with basmati rice and mixed greens salad cooking basmati rice: 1 part rice to 1 1/2 parts water (1 cup rice 1 1/2 cups water etc.) - rinse rice well, place in pot with cool fresh water and a 1/4 tsp. sea salt... bring to a boil, reduce heat to low, cover and let simmer for 20 minutes without removing the lid... remove from heat and leave lid on to steam for another 10 minutes... fluff n serve | |
