blueberry raspberry thingy



the light tasty fave of summer - the BLUEBERRY THINGY... this is a super simple very delicious extremely gentle desert that can be made with or without wheat... there is always a super abundant supply of wild raspberries during the summer so when they are available, we add these to the mix... you can substitute blueberries with peach preserves or sliced apples as well

    mix
  • 1 1/2 c organic unbleached white, pastry, or barley flour / or a combination of flours / or a wheat-free baking mix
  • 1 1/2 tsp baking powder
  • 3/4 c maple syrup

    add
  • 1/4 cup oil
  • 1 cup soy milk
  • 1 tsp vanilla

mix all ingredients till smooth - pour into oiled 8x11 glass baking dish - drop 1/2 pint (about 1 cup) of blueberries and / or raspberries evenly on the top - bake at 350° for 25 minutes - cool - enjoy!
